About Shrinkage
Shrinkage occurs when meat shrinks during cooking. This shrinkage happens because of moisture loss. Moisture loss is caused by evaporation and/or exudation. Exudates are liquid that comes out of the muscle cells and evaporates into the surrounding air. Evaporative losses occur when water vapor leaves the surface of the meat and escapes into the surrounding air. Both types of losses result in weight loss.

A cheap thermometer will not give accurate readings. 2 If you are using a gas oven, turn it off and wait for 10 minutes. Then open the door and check if the oven is hot enough. If it is still cold, leave it another 5 minutes and check again.
