Exudates are liquid that comes out of the muscle cells and evaporates into the surrounding air. Evaporative losses occur when water vapor leaves the surface of the meat and escapes into the surrounding air. Both types of losses result in weight loss.

A cheap thermometer will not give accurate readings. 2 If you are using a gas oven, turn it off and wait for 10 minutes. Then open the door and check if the oven is hot enough.
