Fill the pie shell with the filling. Cover the pie shell with the bottom layer of parchment paper and crimp the edges together using your fingers. Gently remove the top layer of parchment and trim away any excess paper. Use a sharp knife to cut vents in the top of the pie shell. Bake the pie shell according to the directions below.

Cover with plastic wrap and freeze until firm, about 30 minutes. Repeat steps 7 and 8 twice more. Wrap the rounds tightly in plastic wrap. Freeze for 3 hours or refrigerate for 12 hours. Thaw the pastry in the refrigerator for 6 hours.
