Next, I added the cheese and noodles to the sauce and stirred. After adding the eggs, I returned the mixture to the bain-maries and cooked for another 5 min. Once the pasta had cooked, I served it right away.

You could try heating the sauce in a skillet on low heat. This way, you can stir the pasta while it cooks.
