Ingredients: 1 cup long grain white rice preferably basmati 1/2 teaspoon turmeric powder 1 tablespoon butter 1 medium onion chopped 1 carrot grated 1 stalk celery finely sliced 1 clove garlic minced 1 bay leaf 1/4 teaspoon black peppercorns 1/2 teaspoon salt 1/2 cup water 1/4 cup slivered almonds saffron threads optional garnish: 1/2 cup currants 1/2 cup golden raisins 1/2 cup dried cranberries 1/2 cup pistachios 1/2 cup pine nuts 1/2 cup blanched almonds 1/2 cup walnuts 1/2 cup cashews 1/2 cup coconut flakes Instructions Heat the oven to 350°F. Grease a 9 x 13 inch baking dish. In a heavy skillet, melt the butter over medium heat. Sauté the onions, carrots, celery, and garlic until softened, about 10 minutes. Stir in the spices and salt. Transfer mixture to prepared baking dish. Cover tightly with foil. Bake for 40 minutes. Uncover and stir. Return to oven and bake another 20 minutes. Remove from oven and set aside. Meanwhile, bring the water to a boil in a saucepan. Reduce heat to low. Stir in the rice and return to a boil. Cook, uncovered, for 15 minutes. Fluff with a fork. Stir in the currants, raisins, cranberries, pistachios, pine nuts, almonds, walnuts, cashews, and coconut. Spread evenly in the baking dish. Top with the saffron threads, if desired. Bake for 25 minutes. Let cool slightly before serving. Garnish with additional nuts, if desired.

Ingredients: 2 cups cooked ramen noodles or any other type of pasta 1/3 cup mayonnaise 1/3 cup soy sauce 1/3 cup sesame seeds 1/3 cup scallions 1/3 cup cilantro leaves 1/3 cup jalapeno peppers seeded and diced 1/3 cup green bell pepper diced 1/3 cup red bell pepper diced and seeded 1/3 cup yellow bell pepper diced, seeded and drained 1/3 cup cucumber peeled and diced 1/4 cup ginger root finely chopped 1/4 cup garlic cloves finely chopped 2 tablespoons lime juice 1 tablespoon sugar 1 tablespoon sriracha sauce 1 tablespoon rice vinegar 1 tablespoon sesame oil 1 tablespoon olive oil 1/2 teaspoon kosher salt Directions: Combine all ingredients except the salt in a bowl. Ingredients: 3 medium sized ripe tomatoes cut into wedges 6 ounces mozzarella cheese cut into cubes 1/2 cup extra virgin olive oil 1/2 cup balsamic vinegar 1/2 cup basil leaves 1/2 cup flat leaf parsley leaves 1/2 cup mint leaves 1/2 cup chives 1/2 cup parmesan cheese Instructions: In a large bowl add the tomatoes, mozzarella, herbs, and parsley. Drizzle with olive oil and balsamic vinegar. Add salt and freshly ground black pepper to taste. Mix together until combined. Top with parmesan cheese and serve. 6 – Creamy Tomato Soup Answer: This is a creamy tomato soup that is perfect for a cold winter day. It is very light and flavorful. Ingredients: 1 28 ounce can crushed tomatoes 1 14.5 ounce can petite diced tomatoes 1 10.5 ounce can condensed cream of mushroom soup 1 8 ounce container sour cream 1 4 ounce package shredded sharp cheddar cheese 1/4 cup grated Parmesan cheese 1/4 cup heavy whipping cream 1/4 teaspoon dried oregano 1/4 teaspoon paprika 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon salt 1/4 teaspoon white pepper 1/4 teaspoon ground nutmeg Instructions: Heat oven to 350 degrees F. Spray a 9×13 baking dish with nonstick spray. Place crushed tomatoes in a blender along with remaining ingredients. Blend until smooth. Pour mixture into prepared pan. Bake 30 minutes or until bubbly. Let cool 10 minutes before serving.

Line a cookie sheet with parchment paper. Bring salted water to boil in a large pot. Cook potato slices about 7 minutes or until tender. Drain well. Transfer to a bowl and toss with salt and pepper. Combine flour and milk in another bowl; stir well. Dip each potato slice in flour mixture, shake off excess, dip in egg mixture, and coat completely with Parmesan cheese.
