1 – Roasted Asparagus with Balsamic Reduction
Creamed corn is a classic side dish for many different kinds of meat. It’s easy to make and delicious. Simply combine 1/2 cup milk, 2 tablespoons butter, 1 tablespoon flour, salt and pepper in a saucepan. Bring to a simmer and stir until smooth. Add 2 cups frozen corn kernels and continue stirring until heated through. Serve immediately. 2 – Mashed potatoes are a great accompaniment to any meal. They’re easy to make and very versatile. Combine 3 pounds peeled and cut potatoes with 4 cups whole milk, 6 tablespoons butter, 1 teaspoon salt, and freshly ground black pepper. Cover and bring to a boil. Reduce the heat to medium-low and let simmer until the potatoes are tender, about 20 minutes. Mash with a potato masher or fork. Stir in 2 teaspoons chopped chives. Season with additional salt and pepper if desired. 3 – Green beans are a healthy vegetable that goes well with almost anything. They’re low in calories and fat, but still taste good. To prepare green beans, trim off the ends and remove the strings. Boil in salted water until crisp-tender, about 5 minutes. Drain and rinse under cold running water. Toss with olive oil and season with salt and pepper.
2 – Cheesy Polenta Rounds
1 In a large bowl, whisk together eggs, milk, cheese, garlic powder, oregano, basil, and salt and pepper to taste; set aside. Heat oil in a 12-inch cast iron skillet over medium heat. Working in batches, add polenta to pan and flatten into rounds using a spatula. Cook until golden brown, about 10 minutes per side. Remove from pan and place on paper towels to drain. Sprinkle with Parmesan cheese. Cut each round into quarters and serve. 3 Preheat oven to 350 degrees F. Butter a 9×13 baking dish. Place half of the polenta mixture in bottom of prepared dish. Top with half of the tomato sauce and sprinkle with half of the mozzarella cheese. Repeat layers. Bake for 30 minutes or until bubbly. Let stand 15 minutes before serving. Garnish with parsley. 4 Make this recipe ahead! Prepare the polenta according to package directions. Cool completely. Wrap tightly and store in refrigerator up to two days. Reheat in a 350 degree F oven for 25 minutes.
3 – Baked French Fries
Preheat oven to 425°F. Line a baking sheet with parchment paper. Peel potatoes and cut into 1/2-inch thick slices. Toss with olive oil and season with salt and pepper. Arrange potato slices on prepared baking sheet in a single layer. Bake for 20 minutes. Flip chips and bake another 5–10 minutes or until tender. 1 Preheat oven to 400 degrees Fahrenheit. Cut off the top quarter of each garlic bulb. Drizzle with 2 tablespoons olive oil, sprinkle with salt and pepper. Wrap bulbs tightly in aluminum foil. Place on a baking sheet and roast for 30 minutes. Remove from oven and let cool slightly. Squeeze cloves from papery skins. Discard skins. Mash garlic cloves with a fork. Add butter and milk; beat well. Season with salt and pepper. 2 Heat remaining tablespoon of olive oil in a medium skillet over medium heat. Sauté onions until golden, about 10 minutes. Transfer onions to a bowl. Stir in flour and mix well. Gradually whisk in milk. Bring mixture to a simmer, stirring constantly. Reduce heat to low and continue to stir until sauce thickens, about 5 minutes. Return onions to pan and toss to coat. Season with salt and black pepper.
5 – Fresh Green Salad

Season with salt and freshly ground black pepper. 2 Heat the remaining tablespoon of olive oil over medium heat in a medium skillet. Sauté the onions until golden, about 8 minutes. Transfer the onions to a bowl. Mix in the flour and season with salt and pepper. Gradually whisk in the milk. Bring the mixture to a boil, stirring constantly. Reduce the heat to low and continue stirring until the sauce thickens, about 3 minutes. Return the onions to the pan and toss to coat with the sauce. Season with salt and fresh ground black pepper. 3 – Fresh Green Salad

Combine dressing ingredients in a jar with a tight fitting lid. Shake well. Pour over salad. Cover and chill for at least 4 hours. 2 Cook couscous according to package directions. Drain any excess liquid. Stir in chopped parsley and serve immediately.
